The Keppel family is always on the move during the week. While things can get hectic, we still make sure to eat something healthy.

One of our go to meals is eating a breakfast dish at dinnertime.

I typically have an omelette with 2 whole eggs and 1 egg white, some veggies, and 2 to 3 pieces of turkey bacon or turkey sausage.

My sides include 1 to 2 slices of whole grain bread topped with some organic peanut butter or almond butter.

This is an easy meal to make when you’re in a time crunch.

I believe breakfast for dinner is a great idea, especially when the kids don’t mind it either.
