
Pumpkins are getting all the attention right now, but let’s shine a spotlight on another fall favorite – butternut squash!
Butternut squash has a pleasant, nutty flavor and slightly sweet taste.
It’s high in vitamin A, fiber, and beta-carotene.
You can steam or roast butternut squash and season it with salt and a little butter from pastured cows (like Kerrygold butter) or enjoy it on the sweeter side with a little coconut oil, stevia, and cinnamon.
Go figure, I love butternut squash in my protein shakes!
Just use steamed or roasted butternut squash in place of pumpkin or sweet potato.
